
No Argentine grandmother made this. It comes from the observation that chimichurri spends its life next to a fire and never picks up any of it — so we built a version that tastes like it sat downwind of the coals for an hour. Smoked paprika and smoked chili replace the sweet paprika and ají; black pepper replaces white because it stands up better to smoke. It is a modern blend and we are not going to pretend otherwise.
Same sauce method as the Clásico. Where it beats the original: pan-seared steak, roasted cauliflower and broccoli, sweet potatoes, black beans, chicken wings, mushrooms of any kind. Stir a spoonful into mayonnaise for a sandwich that will end arguments.
