If an Argentine kitchen kept only three of these fifteen, it would keep these. The coarse salt every asado recipe simply calls sal gruesa, the asado seasoning that says where the meat is from without covering it, and chimichurri — the country’s green answer to everything — as a salt. It is the most direct route from this line to the tradition behind it.

How to use it
