What we can add

This is a seasoning first and a salt second. Two salts open the list — plain sea salt, then smoked sea salt — so the smoke is a fraction of the salt rather than the whole of it, and the label does not say how much or how it was smoked. The chile is named as Hatch green chile, which is the New Mexico variety; the label says nothing about where this lot was grown.

Two of the eight ingredients are not flavourings. Rice concentrate is the flow agent organic seasoning makers use in place of silicon dioxide, and a little sunflower oil is listed last; the label does not say what either is for, and we have not asked. Neither is hidden — both are on the list. It is the first entry here to carry a flow agent, which is worth knowing next to the Cornish tub that advertises having none.

The sodium arithmetic

The panel declares 200 mg of sodium in a ¼ tsp serving weighing 0.7 g, which works out to about 286 mg per gram. Pure sodium chloride is 393. Allowing for the rounding the label is permitted, the true figure sits somewhere in the 260–315 band, or roughly 73% of the sodium a gram of table salt would carry.

Lower than either of the first two entries, and for the plainest reason: a good part of the jar is not salt. Chile, garlic, paprika, onion, rice concentrate and oil all take up weight and carry no sodium. The 0.7 g quarter-teaspoon — against 1 g and 1.4 g for the other two — also says the grind is fine and light. None of this is a health feature; it is a seasoning blend that happens to be sold as a salt.

Why a salt company is doing this

Gaucho Provisions sells Patagonian sea salt. This guide records what is on other people’s labels, at the prices we paid, with a photograph of the crystal on white. Every field is copied from the package or the receipt; nothing is scored. We paid retail for every jar, nobody sent us one, and we have no relationship with any brand listed. Our own salts will be entered with the same fields and no more.
