What we can add

The ingredient list is short but not the same as salt plus pieces of truffle: black truffle concentrate is the second ingredient, followed by black summer truffle identified botanically as Tuber aestivum. The package does not define the concentrate or state how much of either truffle ingredient is present.

The label names a California distributor and calls the product black-truffle infused, but it does not name a coast, saltworks, country of salt harvest or truffle origin. The visible brown and black pieces establish that the jar contains more than flavouring alone; they do not establish provenance.

The sodium arithmetic

The panel declares 582 mg of sodium in a ¼ tsp serving weighing 1.5 g, which works out to about 388 mg per gram. Pure sodium chloride is 393. Allowing for the rounding the label is permitted, the true figure sits somewhere in the 370–405 band, or roughly 99% of the sodium a gram of table salt would carry.

At 388 mg of sodium per gram, the printed values sit very close to the theoretical figure for pure sodium chloride. The truffle ingredients are visible but sparse, so almost all of each 1.5 g serving is still salt. The label rounding band is wide enough that the small difference from 393 mg per gram is not meaningful on its own.

Why a salt company is doing this

Gaucho Provisions sells Patagonian sea salt. This guide records what is on other people’s labels, at the prices we paid, with a photograph of the crystal on white. Every field is copied from the package or the receipt; nothing is scored. We paid retail for every jar, nobody sent us one, and we have no relationship with any brand listed. Our own salts will be entered with the same fields and no more.
