What the label says

Quoted as printed, so the claims can be read for what they are.

  • Sea Salt · Flakey White
  • Unmatched quality and authenticity
  • Chef Nick DiGiovanni
  • Store in a cool, dry place.

What we can add

The crystals are broad, thin and irregular, with flat translucent faces and broken edges rather than uniform pyramid shapes. The front calls them “Flakey White”; the ingredient panel gives one ingredient and no anti-caking agent.

The package names a Boston distributor but does not name a coast, country of harvest, saltworks or production method. The most prominent provenance-like material is the portrait and signature of chef Nick DiGiovanni beside “Unmatched quality and authenticity.” That is an endorsement, not an origin statement, so the salt origin remains unstated here.

The sodium arithmetic

The panel declares 590 mg of sodium in a ¼ tsp serving weighing 1.5 g, which works out to about 393 mg per gram. Pure sodium chloride is 393. Allowing for the rounding the label is permitted, the true figure sits somewhere in the 375–410 band, or roughly 100% of the sodium a gram of table salt would carry.

At 393 mg of sodium per gram, the printed values land almost exactly on the theoretical figure for pure sodium chloride. That does not make the salt unusually concentrated; it means the panel describes a dry, single-ingredient salt and the quarter-teaspoon packs 1.5 g. The rounding band matters here because both the sodium figure and the serving weight are rounded label values.

The price

$9.99 for 145 g (5.1 oz) is $1.95 an ounce, or $31.25 a pound — $6.89 per 100 g, $68.90 a kilo. Among the 7 salts in the guide it is number 5 by price per weight, dearest first, and number 1 by sodium per gram. We paid retail at Mariano’s in Bannockburn, IL, on August 28, 2026.

Tasting notes

None yet. We publish tasting notes only against a stated method — how many tasters, in what order, on what food — and we have not run that panel on this salt. When we do, they go here.

Why a salt company is doing this

Gaucho Provisions sells Patagonian sea salt. This guide records what is on other people’s labels, at the prices we paid, with a photograph of the crystal on white. Every field is copied from the package or the receipt; nothing is scored. We paid retail for every jar, nobody sent us one, and we have no relationship with any brand listed. Our own salts will be entered with the same fields and no more.
